Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 lb boneless, skinless chicken breasts, diced
- 2 tsp Cajun seasoning
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- 1 ½ cups dry orzo pasta
- 2 ¼ cups chicken broth
- ½ cup heavy cream
- 1 cup grated Parmesan cheese
Instructions
Step 1: Cook the Chicken
Heat olive oil and butter in a large skillet or pot over medium-high heat. Add diced chicken, season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through. Remove and set aside.
Step 2: Build the Base
In the same pot, add garlic and onion. Sauté until fragrant and softened.
Step 3: Cook the Orzo
Stir in the orzo pasta, then pour in the chicken broth. Bring to a simmer and cook for about 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 4: Make it Creamy
Reduce heat to low. Stir in the heavy cream and Parmesan cheese until melted and creamy.
Step 5: Combine & Serve
Return the chicken to the pot and mix everything together. Adjust seasoning if needed. Serve hot and enjoy a comforting, one-pot Cajun pasta dish!
