Ingredients
- 2 ½ lbs baby creamer potatoes, halved
- 1 ½ lbs beef smoked sausage, sliced into 1-inch pieces
- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 2 tbsp olive oil
- 2 tsp Slap Ya Mama seasoning (or Cajun seasoning of choice)
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 4 tbsp butter, cubed
Instructions
- Preheat the Oven
Heat oven to 350°F. Grease a 9×13 baking dish with nonstick spray. - Season the Potatoes
In a large bowl, toss halved potatoes with olive oil. Season with Slap Ya Mama seasoning, garlic powder, black pepper, and red pepper flakes. - Add Sausage & Veggies
Add sausage, onion, and bell pepper to the bowl. Gently toss to coat everything evenly with the seasonings. - Assemble & Bake
Transfer mixture into the prepared baking dish. Dot the top with cubed butter.
Cover tightly with foil and bake for 30 minutes. Remove foil and bake another 15–20 minutes, until potatoes are fork-tender and slightly golden. - Serve
